Strawberry Nut Granola
- 1 1/2 C Gluten Free Rolled Oats
- 2 Tbsp Brown Sugar
- Pinch of Sea Salt
- 3 1/2 Tbsp Coconut Oil
- 1/4 C Maple Syrup
- 1 1/2 C Pecans, roughly chopped
- 1/2 C Coconut
- 1 C Freeze Dried Strawberries
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a medium size bowl, combine oats, brown sugar and salt.
In a small saucepan, combine coconut oil and maple syrup. Cook over medium heat for 2-3 minutes, whisking until oil is melted and thoroughly combined with syrup. Pour warm mixture over oats. Spread onto prepared baking sheet.
Bake for 20 minutes. Remove from oven, add pecans and coconut. Stir and return to oven. Cook an additional 5-6 minutes.
Remove from oven and cool completely before adding strawberries. Store in refrigerator or freezer in airtight container.
*This recipe is also great with a handful of mini dark chocolate chips added in for a sweeter treat.
