Pumpkin Oatmeal Raisin Cookies

Recipe:

  • 1 C Light Brown Sugar
  • 1/2 C Sugar
  • 3/4 C Coconut Oil, room temperature
  • 1/2 C + 2 Tbsp Pumpkin Puree
  • 1 tsp Vanilla
  • 1 Large Egg Yolk
  • 1 tsp Cinnamon
  • 1/8 tsp Cloves
  • 1/4 tsp Nutmeg
  • 1/4 tsp Ginger
  • 1 1/2 C GF Oats
  • 1 1/2 C GF 1 to 1 Flour (I use Bob's Red Mill)
  • 1/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 C Golden Raisins

Preheat oven to 350 degrees and line 2 baking sheets with parchment paper.

In a medium bowl, combine spices, oats, flour, baking powder, baking soda and salt. Stir until well mixed. Set aside.

In the bowl of an electric mixer, combine sugars and coconut oil. Beat on medium speed until fluffy, 2-3 minutes. Add egg yolk and beat for 30 seconds more. Add vanilla and pumpkin, mix on medium low until combined. Turn mixer to lowest setting and slowly pour in the flour mixture. Mix until just combined, there should be a small amount of dry ingredients left. Remove from the mixer stand. Add in raisins and fold together with a spatula.

Scoop into 2" balls (about the size of a golf ball) and place onto prepared sheets. Press down lightly to flatten the discs, they should be about 1/4 thick. Baking in preheated oven for 12-13 minutes until the edges are set. Cool on the sheet for 2 minutes. Remove to a wire rack to cool completely.

Makes 36 cookies.
