Honey Nut Snack Bars

Recipe:

  • 1/2 C Cashews
  • 1/2 C Pistachios
  • 1/2 C Almonds
  • 1/2 C Pecans
  • 1/2 C Shredded Coconut
  • 1/2 C Chocolate Chips
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 C + 2 Tbsp Honey

Preheat oven to 350 degrees. Line an 8x8 pan with parchment paper and spray with non stick spray.

Rough chop all the nuts. Put all ingredients, except the honey, into a large bowl and stir together. Add honey and stir until all the dry ingredients are coated.

Pour into prepared pan. Spray your hand with a bit of non-stick spray and press the mixture down into an even layer.

Bake for 15-20 minutes. The edges should be bubbly, but if they start to look foamy the honey is burning. Remove from oven and cool completely before cutting. You may even want to refrigerate them for a couple of hours to make them easier to cut. Store in an airtight container for up to a week.
