Happy Accident Bars
This recipe is what happens when you try to multi-task while baking. I didn't read the instructions and measured wrong and came out with something that was still delicious. So I named them "happy accident" bars. The original recipe can be found at http://bakerbynature.com/dark-chocolate-pistachio-nutella-granola-bars/
- 3 1/2 C GF Oats
- 1 C Light Brown Sugar
- 2/3 C Hazelnut Flour
- 1 1/2 tsp Salt
- 3/4 tsp Cinnamon
- 1 C Hazelnuts, roughly chopped
- 1 1/2 C Pistachios, roughly chopped
- 1 C Dried Cherries
- 1 C Dark Chocolate Chips
- 1 C Justin's NutButter Chocolate Hazelnut
- 3/4 C Coconut Oil, melted
- 3/4 C Honey
Preheat oven to 350 degrees and line a 9x13 pan with parchment. Spray with non-stick spray.
In a large bowl, combine all of the dry ingredients and stir well. In a microwave safe bowl, combine hazelnut spread and coconut oil. Heat for 60-90 seconds until it is melted and easy to stir. Add in honey and stir until well combined. Pour over dry ingredients. Stir until all the dry ingredients are incorporated. Dump into prepared baking pan and press down into a flat layer with your hands.
Bake for 30 minutes. Remove from oven and cool completely before cutting. Store in an airtight container for up to a week.
