Chunky Monkey Cookies

Recipe:

  • 3/4 C Brown Rice Flour
  • 2/3 C White Rice Flour
  • 1/4 C Arrowroot Powder
  • 1/2 tsp Xanthum Gum
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 3/4 tsp Salt
  • 3/4 C Coconut Oil
  • 1 C Sugar
  • 1 Egg
  • 1 1/2 tsp Vanilla
  • 1 C Banana, mashed
  • 1 C GF Oats
  • 1 1/2 C of Mix-ins - I used peanut butter cups, chocolate chips and peanuts

Preheat over to 350 degrees. Line cookie sheet with parchment paper

In a large bowl, combine flours, arrowroot, baking powder, baking soda, salt and xanthum gum. Stir until well combined. Set aside.

In the bowl of an electric mixer, beat coconut oil and sugar on medium speed. Scrape down bowl. Add egg and vanilla. Beat until well mixed. Pour wet ingredients into flour mixture. Stir by hand until nearly incorporated. Add oats and mix-ins. Stir until evenly distributed.

Scoop dough into golf ball sized balls and place on cookie sheet spaced 2 inches apart. Bake for 11-12 minutes. Cool for 5 minutes on cookie sheet. Remove to wire rack to cool completely. Store in an air tight container.
