Beach Vacation Granola
- 3 C Gluten Free Oats
- 1/4 C Flax Meal
- 1/4 C Chia Seeds
- 1/2 tsp Salt
- 1 Banana, mashed
- 1/4 C Brown Sugar
- 1/3 C Coconut Oil, melted
- 1 tsp Vanilla Extract
- 1 tsp Rum Extract
- 1 C Dried Pineapple, chopped
- 1 C Coconut Chips or Toasted Shredded Coconut
- 1/2 C Macadamia Nuts, chopped
Preheat oven to 300 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine oats, flax meal, chia seeds and salt. Stir together.
In a second bowl, whisk together banana, brown sugar, coconut oil and extracts. When well combined pour over dry ingredients and stir together until everything is coated.
Spread onto prepared baking sheet. Bake for 35 minutes or until edges are just browned. Do not stir during baking.
Remove from oven to cool. If you like smaller chunks, break the granola immediately after baking. If you prefer large chunks, do not break until it is completely cooled. Once cooled, after about 30 minutes, add the nuts, pineapple and coconut. Stir together. Store in an airtight container.
