Apple Cider Cookies

Recipe:

Put 1 1/2 C Fresh Apple Cider in a small saucepan. Simmer over medium heat until reduced to 1/3 C - about 25 minutes.

  • 1 1/2 C GF 1-to-1 Flour (I use Bob's Red Mill)
  • 1 tsp Cinnamon
  • 1/4 tsp Allspice
  • 1/4 tsp Salt
  • 1 1/2 tsp Baking Powder
  • 3/4 C Sugar
  • 1/2 C Coconut Oil
  • 1 Egg Yolk
  • 1/3 C Boiled Apple Cider (see above)
  • 1/4 C Walnuts, chopped

Topping:

  • 2 Tbsp Sugar
  • 1 tsp Cinnamon

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.

In a large bowl, combine flour, spices, salt, and baking powder. Set aside.

In the bowl of an electric mixer, cream sugar and coconut oil on medium speed. Scrape down bowl. Add egg yolk and mix on med-low until combined. Scrape bowl again. Add cider and flour mixture. Mix on low speed, until just combined. There may be a little flour left unmixed. Remove from stand and mix remainder by hand. Fold in nuts. Scoop into golf ball size pieces. Roll in cinnamon sugar mixture and place on prepared baking sheets. Flatten slightly with fingers.

Bake for 10-11 minutes until edges are set. Cool 1 minute on baking sheet. Remove to wire rack to cool completely. Store in an airtight container. Makes about 18 cookies.
