Chunky Monkey Granola

It's ok to eat chocolate for breakfast! :)

Recipe:

  • 2 1/2 C GF Oats
  • 2 Tbsp Flax Meal
  • 1/4 C Rice Crispies
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 1 Ripe Banana, mashed
  • 2 Tbsp Light Brown Sugar
  • 1/3 C Coconut Oil, melted
  • 1/4 C Maple Syrup
  • 1 tsp Vanilla
  • 1 C Dark Chocolate Chips
  • 1 C Banana Chips
  • 1/2 C Walnuts, roughly chopped
  • 1/2 C Coconut Chips
  • Sea salt to top, optional

Preheat oven to 300 degrees.  Line a baking sheet with parchment paper.

In a large bowl, combine oats, flax, rice crispies, salt and cinnamon.  In a separate smaller bowl, combine banana, brown sugar, coconut oil, maple syrup and vanilla.  Mix well.  Pour wet ingredients over dry.  Fold together with a spatula until all dry ingredients are moistened.  Spread onto prepared baking sheet.

Bake in preheated oven for 40 minutes, stirring every 10 minutes.  Add the chocolate chips and walnuts into granola and cook an additional 10 minutes.  Remove from oven.  Top with coconut chips and banana chips.  Sprinkle with sea salt. Cool completely.

Note: at this point, I stirred my granola which coated everything in melted chocolate.  In hindsight, I would've left it sitting so they would've been chips.  So I recommend not stirring while it's cooling.  In which case, your granola will not look chocolate coated like mine. 

Store in an airtight container in the refrigerator.
