Orange Pistachio Cocoa Nib Granola

Recipe:

 

  • 2 C GF Oats
  • 1 C GF Rice Crispies
  • 2 Tbsp Flax Meal
  • 1/4 tsp Salt
  • 1 tsp Cardamom
  • 1/2 tsp Cinnamon
  • In a second bowl, mix:
  • 3 Tbsp Light Brown Sugar
  • 6 Tbsp Honey
  • 1/2 C Coconut Oil, melted
  • Zest & Juice from 1 Orange

Pour wet ingredients over dry and stir until well coated. Spread on a parchment lined baking sheet. Bake at 300 F for 45 minutes. Stir every 10-15 minutes.

In the last 10 minutes add in:

  • 1 C Pistachios, roughly chopped
  • 1 C Cocoa Nibs

After baking, cool completely on sheet without stirring. Store in an airtight container and refrigerate.
